I don't write a lot about food and I certainly don't take lots of food pictures but I wanted to share our love affair with pasta salad! If you use the right stuff (healthy dressing, lots of veggies and whole wheat pasta) it can be a great way to get a balanced meal with little effort and without heating up the kitchen too much in the summer months. I also love that it's so versatile. This week I didn't have much food in the house but I was still able to make some with a box of veggie pasta, cherry tomatoes (we always have those because leah loves them!), a bell pepper, diced up string cheese and a bottle of italian dressing. I usually like to use turkey or chicken too and more of a variety of veggies but this was what we had. I'm not very imaginative with recipes so this is easy for me even if I want to try to be fancy with it- just toss a bunch of stuff in that kinda makes sense. Like, Greek pasta salad with feta, cucumber, artichoke and tomato. or italian with provolone, salami, tomato. or even mexican with Monterey jack, chicken and peppers. (not that I've tried any of those combos,but I plan to! It sounds easy!)
